Pumpkin Soup To Start October Correctly!

What you will need (written):
-Olive oil (or coconut, or avocado oil)
-8oz (1 can) of coconut milk
-1(yellow) onions diced, cut into slivers
-2 Cloves garlic (grated)
-1 Lemongrass stalk (finely chopped)
-1 tbs Fresh Ginger
-1 bunch of cilantro (Coriander)
-Dash of salt and pepper
-Turmeric and curry if interested!
What to do:
Carve pumpkin, Empty it out, save seeds to make Pumpkin seed oven snack(recipe on website!) Cut into slices, like a melon, like about 4x4inch cubes.
Get a boiling pan, melt 1 tbsp of butter(we like Kerrygold) on med. heat, add coconut oil, and then the onions. Mix, leave with lid on, 5minutes or until translucent. Add garlic
Add ginger, lemongrass, and cilantro(with stalks). cook until soft, then add some of the pumpkin.
Add Coconut milk can, and pumpkin bits. Have enough milk to cover 3/4th of pumpkin bits. Leave with lid on. 25-30 mins
When pumpkin is soft, pour into blender, once soup has cooled. Blend until coriander (cilantro) becomes flecks of green. Add chili flakes for some heat!
